Hot Chicken Salad

This post is for Rose who has been on me to post Hot Chicken Salad since the birth of this blog.  However, the recipe was at my parents' house, and I am bad at memorizing things.  So here you go - if you're tired of turkey leftovers, try this.  It's delicious comfort food that will leave you feeling cozy and satisfied.

3 cups cooked chicken breast, cut into small cubes

1/4 cup almonds

1 cup diced celery

1 teaspoon minced onion

1 tablespoon lemon juice

1/4 teaspoon salt

1/4 teaspoon pepper

2/3 cup mayo or Miracle Whip

Topping: 1 cup grated cheddar cheese & 1 cup crushed potato chips

Mix all ingredients except the topping and pour in a buttered casserole dish.  Top with cheese and chips and bake at 375 degrees for 30 minutes until bubbly.
